Antinori Il Bruciato Bolgheri 2020
Il Bruciato was first produced in 2002 in one of the most difficult vintages for the Guado al Tasso estate. The wine is a modern interpretation of Bolgheri’s unique terroir made from carefully selected Cabernet Sauvignon, Merlot and Syrah grapes from the vineyards of Guado al Tasso. The geological composition of the soil is varied, giving the wine structure and complexity.
Upon arrival at the winery, the selected bunches are removed and carefully crushed. Fermentation and maceration on the skins is carried out in temperature controlled stainless steel tanks for approximately 10 to 15 days at a temperature of 28-30°C (82-86°F). Some of the Merlot and Syrah must is kept at lower temperatures during fermentation to preserve the distinctive flavours of each grape variety. Part of the malolactic fermentation takes place in barriques and part in stainless steel tanks and is completed by the end of the year for all grape varieties. The Cabernet Sauvignon was subsequently blended with Merlot, Syrah and a small percentage of Cabernet Franc and Petit Verdot: the blend was reintroduced into barriques where it was left to age before bottling.
Il Bruciato 2020 has a deep ruby red colour. The nose is intense and enticing with hints of blackcurrant, blackberry, delicate vanilla and sweet spice. Excellent harmony of flavour where the fruity finish dominates and gives length and smoothness. The perfect food combinations for Il Bruciato are grilled steaks, porchetta, meat and pasta dishes.
