Antinori Pepoli Chianti Classico 2021
Pèppoli was first produced in 1985, and since 2013 part of the harvest has been vinified in the Antinori nel Chianti Classico cellars. The Pèppoli vineyards produce Chianti Classico, which is a blend of Sangiovese grapes and complementary varieties.
The Pèppoli estate is located 5 kilometres northeast of the Tenuta Tignanello estate with a total area of 100 hectares (247 acres), of which 50 hectares (123 acres) are planted with vineyards and is home to the Peppoli Chianti Classico DOCG. The
Peppoli estate has a long tradition of producing Peppoli Extra Virgin Olive Oil and Peppoli Red Wine Vinegar, obtained by transforming Peppoli wine into vinegar using traditional methods.
Each grape variety was harvested separately, the stems removed, carefully crushed and transferred to stainless steel tanks. The alcoholic fermentation takes place at a controlled temperature between 26 and 28 °C (80 and 82 °F) to enhance the aromatic compounds and preserve the fruity and floral notes of each grape variety.
Maceration is carried out using mechanical methods to best extract soft, supple tannins over a period of 10 days for Sangiovese and a maximum of two weeks for the complementary varieties. After the malolactic fermentation is completed, by the end of the winter season, the wine is blended and transferred into barrels.
Pèppoli is aged in large Slavonian oak barrels and a small percentage is aged in stainless steel barrels. The wine was bottled January 2022.
Antinori Pepoli Chianti Classico 2021 is ruby red in colour. On the nose, Pèppoli offers sweet notes of red fruits; cherries, sour cherries and lychees accompanied by floral rose petal aromas and spicy notes of sandalwood, rosemary and lavender. The palate is mellow with soft, sweet tannins along with a well-balanced freshness that make it easy drinking, lively and spicy.
Antinori Pepoli Chianti Classico 2021 pairs best with meaty Italian dishes with tomato sauce, such as spaghetti and meatballs, lasagna, chicken parmesan, baked ziti, pizza and bruschetta.
